According to Bild, a secret weapon for the German team in this European Championship is their chef’s recipe book.
In preparation for their second group match against Hungary, the German team has maintained a particular dietary tradition, hoping it will secure their victory. Before the game, the anglerfish continues to take center stage on the menu, with the team banking on its power to advance to the round of 16 in the Euros.
Since 2017, Michelin-starred chef Anton Schmaus (42) has meticulously planned the German national team’s meals, working closely with head coach Joachim Löw to ensure each dish contributes to the team’s optimal performance. A recent highlight of their winning match day menu was veal with mushroom cream sauce and anglerfish served with spinach and a light butter sauce.
Although the anglerfish, known for its peculiar appearance in the deep waters of the northeastern Atlantic, might be called a “sea monster” due to its flat body, large head, and unique looks, under Schmaus’ culinary expertise, it transforms into a nutrient-dense, low-fat, high-protein meal ideal for athletes.
Schmaus introduced the anglerfish dish before a friendly against France in March (which ended 2:0), and since then, owing to an unbeaten run (including a 2:1 win over the Netherlands, a 0:0 draw against Ukraine, a 2:1 victory over Greece, and a 5:1 Euro debut win over Scotland), it has become a pre-match ritual. He also shared that the night before the game, he serves apple strudel with vanilla sauce as another lucky charm.
Besides these superstitious culinary practices, the German national team’s dietary management is highly regulated, with poppy seeds, which can contain prohibited substances, strictly forbidden. On match days, players are advised to avoid heavy meals three and a half hours before kickoff to prevent any adverse impact on their performance. After the match, within 75 minutes, they promptly replenish energy, with Schmaus always ready in the locker room with induction hobs and cookware to prepare nutritious meals for their recovery.
